O. ficus-indica is the type most commonly eaten in Mexico. Napalea species are also eaten.

All Opuntias are edible. The most eaten in Mexico is Opuntia ficus-indica. Incidentally, it is also the most common around the Mediterranean, Italy included. Chances are, if you see an Opuntia anywhere in Italy, it is a ficus-indica, the same the Mexicans eat.
